Frozen Yogurt & Granola Bars



Frozen Yogurt Granola Bars are the perfect no-bake summer dessert, snack, or breakfast! They're refreshing and the perfect blend of creaminess and tartness. They're packed with healthy and filling ingredients like yogurt, almond butter, and oats.

Ingredients

FOR THE GRANOLA BASE

* 2 cup (180 g) rolled oats

* 2/3 cup (160 g) almond butter

* 1 tsp vanilla

* 3 tbsps (40 g) oat milk (or any milk)

* 2 tbsps (30 g) melted coconut oil

* 4 tbsps (85 g) maple syrup

* Pinch of salt


FOR THE YOGURT

* 1 3/4 cup (500 g) plain greek yogurt (or thick plant yogurt)

* 1-4 tbsps honey or maple syrup (any sweetener)


FOR THE BERRIES

* 1 cup frozen raspberries (any berries)


Instructions

1. For the berries. Add the frozen berries to a pot over the stove. Heat over medium heat until you can gently mash the fruit with a wooden spoon (leave some chunks if you want). Remove from the heat and allow to cool slightly while you prepare the yogurt.

2. For the granola base. In a large bowl, combine the almond butter, vanilla, milk, coconut oil, maple syrup, and salt. Mix until well combined and then stir in the oats.

3. Line a 7x11 or 8 x 8 baking dish with parchment paper. Press the granola mixture into the baking dish--the mixture will be on the sticky side, so you can use wet hands to help spread the mixture evenly.

4. For the yogurt. Mix greek yogurt and honey until combined.

5. Assemble the bars. Spread the yogurt evenly over the base. Dot the yogurt with the fruit and use a butter knife to gently swirl the fruit into the yogurt.

6. Place the baking dish in the freezer to completely set about 1-2 hours, or until the yogurt is solid.

7. Remove from the freezer, let the bars thaw about 5 minutes and cut into desired size squares and enjoy.


Store

In the freezer, with parchment paper in between cut slices to prevent them from sticking.
