Raspberry Energy Balls



Super juicy, simple and easy to make! These pink balls are juicier than regular energy balls thanks to the raspberries and made without any nut/seed butter. I love these balls, because they are low fat (we don't use nuts or seeds) but still tasty.


Prep time: 15 minutes

Chill time: 1 hour

Total time: 1 hour 15 minutes

Yields: 18 balls


Ingredients

180 g pitted dates

170 g rolled oats

150 g frozen raspberries

30 g grated coconut (optional)

1/2 tsp salt


Instructions

1. Chop pitted dates in the food processor, to create an homogeneous date paste.

NOTE! If your dates are dry and not soft, please soak them in warm water about 15 minutes.

2. Add the remaining ingredients and blend again. Scrape the mixture off the sides of the food processor.

3. Try to shape balls with your fingers. If it’s too moist and sticky, chill the mixture in the fridge 15 minutes, the oats soaks up the liquid.

4. Take some dough and shape balls (a walnuts size) in your hands.

5. Optional! Roll the balls in grated coconut.


Store:

In the fridge for 3-4 days. Or in the freezer up to 3 month.
