Healthy Oatmeal Cookie Dough Balls



These Healthy Cookie Dough Balls are a healthy snack and take minutes to make. They are filled with nut butter, sweetened with maple syrup, and only five ingredients total.

Chill time: 30 minutes

Total time: 35 minutes

Yield: 9 balls


Ingredients

* 1 cup (100 g) oat flour (finely ground oats)

* 1/2 cup (120 g) peanut butter (any nut/seed butter)

* 3 tbsp (60 g) maple syrup (any liquid sweetener)

* 2 tbsp coconut oil, melted (add more if needed)

* 1 tsp vanilla

* Pinch of salt if none in nut butter

* 1/2 cup (50 g) dark chocolate chips (I used chopped chocolate)


Instructions

1. Mix together peanut butter, maple syrup, vanilla, salt and coconut oil in a bowl until well combined.

2. Add flour and chocolate chips. Stir with spatula. We need to get soft dough, but not wet and sticky! Add more oil or syrup (1 tbsp) if needed.

3. Scoop about 2 tbsp. Place on the plate and cover

4. Chill in fridge for 30 minutes.


* OAT FLOUR: To make oat flour, place old fashioned or quick oats in a blender and pulse until they resemble flour. Measure after blending to make sure you have the right amount.


Store

Store in fridge or freezer. If freezer, defrost for a few minutes before eating.
